Why do oxpeckers peck at large mammals?

Because they are Peckers! haha

They peck large mammals because they feed only from the backs of large mammals. That is their only food source. They eat ectoparasites, particularly ticks, as well as insects infecting wounds and the flesh and blood of some wounds as well. This is actually beneficial to both animals.
